Our coffees are segmented by scores: 80+, 85+, 88+. The "scores" are thanks to the "Specialty Coffee Association of America", which has established a very strict rating protocol to assess the quality of specialty coffee. This rating allows industry players and amateurs to use a common language. This tasting protocol records the main criteria for evaluating coffee: aroma, flavor, aftertaste, acidity, body, harmony, purity.

The final result placed the coffee in a hierarchy typical of specialty coffees. A coffee must achieve a minimum score of 80/100 to be considered a specialty coffee.

Details of the scores assigned to specialty coffees:

Score 80+ = very good special coffee
Score 85+ = exceptional coffee
Score 88+ = grand cru

Fine selected coffee beans

Our coffee cherries are hand picked on the coffee plantation and during the selective picking they are selecting only the ripe cherries, then returning to the tree several times over a few weeks to pick remaining cherries as they ripen. This is how we ensure the best quality coffee, to reach bold flavors and energizing aromatics.

The Fresh Roasted Coffee process begins at the source. Our coffees are chosen and established with great love and consideration of origin, flavor profile and quality. All of these components help us to deliver consistent, exceptional coffee with true approachability.
But what does fresh coffee really mean?

More importantly, how do you bring the best flavor out of your favorite coffees?
The bulk of coffee flavor comes from roasting. Roasting is both science and art. It involves careful application of heat to coffee beans to turn the raw ‘green’ coffee beans into the brown coffee beans we all consume daily. Roasting releases aromatic substance, reduce the weight of the raw beans as the moisture has been roasted out, increases their size, makes them crunchy and causes a change in color, varying from light brown to dark.
